This is our award-winning, cave-aged cheddar, with more crystallization of the enzymes that creates an intense flavor and a crumble-like texture born in our caves in Egg Harbor, Wisconsin. Aged two to three years. It is a special selection that appeals to all cheddar lovers. Third place award at the World Dairy Contest.
Great milk makes great cheese, and at Door Artisan Cheese Company, all our milk comes exclusively from Red Barn Farms, a co-op group of nine Family Farms with 50 or less milking cows per farm. They are all American Humane Society certified, offering the highest quality the industry provides.
